Broth Preparation

Prepare the Broth
In a large pot, combine the pork bone broth, sambal oelek, soy sauce, minced ginger, chopped garlic, and water. Bring to a simmer over medium heat and let cook for 20 minutes to allow flavors to meld.

Add Scallions
After simmering, add the chopped scallions to the broth and continue to simmer for an additional 10 minutes.
Pork Preparation

Prepare the Pork
Preheat your smoker to 225°F (107°C). Rub the pork tenderloin with smoked paprika, salt, and black pepper. Place the pork in the smoker and smoke for about 1 hour, or until the internal temperature reaches 145°F (63°C).

Slice the Pork
Once smoked, remove the pork tenderloin from the smoker, let it rest for 10 minutes, then slice into thin pieces.
Noodles and Assembly

Cook the Udon Noodles
In a separate pot, cook the udon noodles according to package instructions. Drain and set aside.
