Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

Chop the Onion
Peel and slice the red onion into thin strips.

Cook the Bacon
In a large skillet, cook the pepper bacon over medium heat until crispy. Remove the bacon from the skillet and place it on paper towels to drain. Leave about 1 tablespoon of bacon grease in the skillet.

Season the Sprouts
Sprinkle the salt, black pepper, and garlic powder over the Brussels sprouts. Mix well to ensure even seasoning.

Add the Bacon and Cheese
Crumble the cooked pepper bacon and add it back to the skillet along with the grated Reggiano cheese. Stir to combine and let it cook for an additional 2-3 minutes until the cheese is melted and everything is heated through.
Serving

Plate and Serve
Remove from heat and transfer the sautéed Brussels sprouts to a serving dish. Enjoy as a side dish or a main vegetarian dish!
