Cook the Chicken Breast
Preheat the oven to 375°F (190°C). Season the chicken breasts with garlic powder, salt, and black pepper. Heat 2 tablespoons of olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken is cooked through (internal temperature of 165°F or 75°C).

Cook the Salmon Fillet
Season the salmon fillets with lemon juice, salt, and black pepper. In another skillet, heat 1 tablespoon of olive oil over medium-high heat. Place the salmon fillets skin-side down and cook for 4-5 minutes. Flip and cook for an additional 3-4 minutes until cooked through.

Plate the Dish
On each plate, place a portion of quinoa, add the sautéed vegetable medley on the side, and top with either the chicken breast or salmon fillet. Garnish with freshly chopped parsley.
