Method
Preparing the Fries

Cutting the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick, to create the fries.

Soaking the Potatoes
Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry with paper towels.

Heating the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Frying the Potatoes
Carefully add a batch of the dried fries to the hot oil. Fry for about 5-7 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.
Making the Peppercorn Ranch Dressing

Mixing Ingredients
In a bowl, combine mayonnaise, sour cream, buttermilk, dried dill, garlic powder, crushed black peppercorns, and salt. Whisk together until smooth and well combined.

Chill the Dressing
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.
Making the Sriracha Fry Sauce

Combine Ingredients
In a separate bowl, mix together mayonnaise, Sriracha sauce, lime juice, garlic powder, and salt. Stir until well blended.

Taste the sauce and adjust the salt or Sriracha according to your preference.
