Method

Preparation of Pickles

  1. 1

    Prepare the Pickles

Drain the dill pickle slices and pat them dry with paper towels to remove excess moisture.

Batter Preparation

  1. 2

    Mix the Dry Ingredients

In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper.

  2. 3

    Add Wet Ingredients

In a separate bowl, whisk together the egg and milk. Then add this mixture to the dry ingredients and stir until well combined.

Fry Sauce Preparation

  1. 4

    Make the Fry Sauce

In a small bowl, mix together the Sriracha, mayonnaise, and lemon juice until smooth. Adjust seasoning to taste and set aside.

Frying the Pickles

  1. 5

    Heat the Oil

In a deep frying pan or heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 6

    Coat the Pickles

Dip each pickle slice into the batter, allowing excess batter to drip off.

  3. 7

    Fry the Pickles

Carefully place the battered pickles into the hot oil in batches. Fry until golden brown, about 2-3 minutes per side.

  4. 8

    Drain the Pickles

Using a slotted spoon, transfer the fried pickles to a plate lined with paper towels to drain excess oil.

Serving

  1. 9

    Serve

Serve the deep-fried pickles hot with the Sriracha fry sauce on the side.
