Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.

Coat the Calamari
Dip each calamari ring into the wet mixture, allowing excess to drip off, then dredge them in the dry mixture until thoroughly coated.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings in batches to the hot oil. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Spices
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Mix well.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.
