Prep the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

Make the Glaze
In a medium bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, minced garlic, and minced ginger until well combined.

Toss and Roast
In a large bowl, toss the halved Brussels sprouts with olive oil and salt. Spread them out in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are crispy and golden brown, stirring halfway through.

Add the Glaze
Once the Brussels sprouts are roasted, remove them from the oven and drizzle the sweet chili glaze over the sprouts. Toss to coat evenly and return to the oven for an additional 5 minutes, allowing the glaze to caramelize slightly.

Garnish and Serve
Remove the Brussels sprouts from the oven, and transfer them to a serving dish. Sprinkle sesame seeds and sliced scallions on top. Serve warm as a delicious appetizer or side dish.
