Creamy Queso Dip Recipe

Roast the Jalapeños
Preheat your oven to 400°F (200°C). Place whole jalapeños on a baking sheet and roast for about 15-20 minutes, turning occasionally until they are blistered and charred. Remove from oven, let cool, then chop finely.

Prep the Vegetables
Dice the onion and tomatoes. Set aside.

Melt the Cheeses
In a large saucepan over medium heat, combine the cream cheese and milk. Stir until the cream cheese is melted and the mixture is smooth.

Add Cheddar and Other Cheeses
Gradually add the cheddar cheese, Monterey Jack cheese, and Pepper Jack cheese, stirring continuously until all the cheese is melted and the mixture is creamy.

Incorporate Vegetables
Add the diced onions, tomatoes, and roasted jalapeños to the cheese mixture. Stir well to combine. Season with salt and black pepper to taste.

Continue to cook the mixture on low heat for about 5-10 minutes, stirring occasionally, until heated through and all ingredients are combined.

Transfer the creamy queso dip to a serving bowl and serve warm with tortilla chips on the side.
