Add flour
Once boiling, remove from heat and stir in flour until a dough forms.

Incorporate eggs
Allow the mixture to cool slightly, then beat in eggs one at a time until fully incorporated and smooth.

Heat oil
In a deep frying pan, heat vegetable oil to 375°F (190°C).

Pipe churros
Transfer the dough to a piping bag fitted with a star tip. Pipe 4-6 inch long strips into the hot oil.

Fry churros
Fry the churros until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

In a shallow bowl, combine granulated sugar and ground cinnamon.

Serve
On a serving plate, place the churros alongside scoops of vanilla ice cream. Melt the Abuelita Mexican chocolate and drizzle over the churros. Garnish with a mint sprig.
