Method
Preparation
- 1
- 2
Melt Chocolate and Butter
In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth. Set aside to cool slightly.
- 3
Mix Sugar and Eggs
In a mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is thick and pale, about 3-4 minutes.
- 4
Combine Mixtures
Gently fold the melted chocolate mixture into the egg mixture. Add the vanilla extract and pinch of salt. Mix until well combined.
- 5
Add Flour
Sift the flour over the chocolate mixture and gently fold it in until just combined. Be careful not to overmix.
Baking
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center should still look soft and slightly jiggly.
- 8
Cool Slightly
Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes.
- 9
Invert and Serve
Place a plate on top of each ramekin and quickly invert them to release the cakes. Serve immediately with a scoop of vanilla ice cream on the side.
Garnishing
- 10
Add Garnishes
Dust the lava cakes with powdered sugar and add fresh berries if desired. Enjoy your delicious Chocolate Lava Cake!
