Prepare the pears
Peel, core, and slice the pears into wedges. Set aside.

Prepare the prosciutto
Cut the prosciutto slices in half lengthwise. Set aside.

Prepare the walnuts
Roughly chop the candied walnuts if they are large. Set aside.
Cooking

Caramelize the pears
In a skillet, heat the olive oil over medium heat. Add the pear wedges and sprinkle with brown sugar. Cook for about 5-7 minutes, turning occasionally, until the pears are golden and caramelized. Season with salt and black pepper to taste. Remove from the skillet and set aside.

Crisp the prosciutto
In the same skillet, add the prosciutto slices and cook for about 2-3 minutes per side, or until crispy. Remove and drain on paper towels.

Assemble the dish
On a serving plate, arrange the caramelized pears, crispy prosciutto, crumbled Gorgonzola cheese, and chopped candied walnuts. Top with fresh arugula.

Drizzle the balsamic vinegar over the assembled dish for added flavor.
