Method
Preparing the Steak

Make the Blackening Rub
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, oregano, thyme, salt, and black pepper. Mix well.

Season the Ribeye
Generously rub the blackening spice mixture all over the ribeye steaks. Allow them to sit at room temperature for about 30 minutes to absorb the flavors.

Heat the Skillet
Place a cast-iron skillet over high heat and let it get very hot. You can add a small amount of oil if desired, but the meat will also provide its own fat.

Sear the Steaks
Once the skillet is hot, add the ribeye steaks. Sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
Making the Brown Sugar Bourbon Butter

Combine Ingredients
In a small bowl, mix together softened unsalted butter, brown sugar, bourbon, and chopped fresh chives until well combined.

Chill the Butter
Place the butter mixture on a sheet of plastic wrap, roll it into a log shape, and refrigerate until firm.
Preparing the Crispy Fried Onion Strings

Soak the Onions
Slice the onion thinly and soak in buttermilk for at least 30 minutes.

Prepare the Breading
In a separate bowl, mix together flour, cornstarch, salt, and black pepper.

Fry the Onion Strings
Heat vegetable oil in a deep pan to 350°F (175°C). Remove the onions from the buttermilk, dredge in the flour mixture, and fry in batches until golden brown and crispy, about 2-3 minutes. Drain on paper towels.
Making the White Cheddar Mashed Potatoes

Mash the Potatoes
Drain the potatoes and return them to the pot. Add heavy cream, white cheddar cheese, unsalted butter, salt, and black pepper. Mash until smooth and creamy.
Preparing the Seasonal Vegetables

Sauté the Vegetables
In a skillet over medium heat, sauté the seasoned vegetables until tender, about 5-7 minutes.
Plating the Dish

Serve the Steak
Slice the ribeye steak against the grain and place on a plate. Top with a slice of brown sugar bourbon butter.
