Bacon Wrapped Dates Recipe
Medjool dates stuffed with Gorgonzola cream cheese and almonds, wrapped with maple pepper bacon. Served with balsamic reduction, red pepper curls and spring greens.

Preparation of Stuffed Dates

Prepare the Dates
Using a sharp knife, make a lengthwise slit in each Medjool date to create a pocket. Be careful not to cut all the way through.

Make the Filling
In a small bowl, mix together the Gorgonzola cheese and cream cheese until well blended. Stir in the chopped almonds.

Stuff the Dates
Fill each date pocket with approximately 1 tablespoon of the cheese mixture. Ensure the filling is evenly packed inside.
Wrapping and Cooking

Wrap the Dates
Take a slice of maple pepper bacon and wrap it around each stuffed date, securing it with a toothpick if necessary.

Preheat the Oven
Preheat your oven to 200°C (400°F).

Bake the Dates
Place the wrapped dates on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the bacon is crispy.
Serving

Prepare the Plate
On a serving platter, arrange the spring greens as a bed for the bacon-wrapped dates.

Add the Dates
Once cooked, remove the dates from the oven and place them on top of the spring greens.

Drizzle the balsamic reduction over the dates and garnish with red pepper curls before serving.
