Preparation

    Prepare the Fruits

    Rinse the blackberries and elderberries under cold water. If using dried elderberries, soak them in water for about 30 minutes before use.

Brewing

    Combine Ingredients

    In a large pot, combine the rinsed blackberries, soaked elderberries, and water. Bring to a boil over medium heat.

    Add Cider and Sugar

    Once boiling, add the apple cider and brown sugar. Stir until the sugar is completely dissolved.

    Add Spices

    Add the cinnamon sticks and cloves to the mixture. Reduce heat and let it simmer for about 30 minutes.

Fermentation

    Cool and Strain

    Remove the pot from heat and allow the mixture to cool to room temperature. Once cooled, strain the liquid through a fine mesh sieve to remove solids and spices.

    Add Yeast

    Transfer the strained liquid to a fermentation vessel. Sprinkle the champagne yeast over the top and gently stir to combine.

    Ferment

    Seal the fermentation vessel with an airlock and let it ferment in a cool, dark place for 1-2 weeks, or until fermentation activity stops.

Bottling

    Bottle the Cider

    Once fermentation is complete, siphon the cider into clean bottles, leaving some headspace. Seal the bottles tightly.

    Let the bottles age in a cool, dark place for at least 2-4 weeks to develop flavors before enjoying.
