Vegetable Spring Rolls

Prepare the Vegetables
In a bowl, combine julienned carrots, cucumber, and red bell pepper. Add fresh mint and cilantro leaves. Toss gently to mix.

Soak the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft. Remove and lay flat on a clean surface.

Assemble the Rolls
Place a lettuce leaf on the bottom third of the rice paper. Add a small amount of the vegetable mixture. Fold the sides of the rice paper over the filling, then roll tightly from the bottom up to form a roll.

Repeat
Continue the process with the remaining rice paper wrappers and filling. Serve the rolls with soy sauce for dipping.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Tomato Mixture
In a bowl, combine diced tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and pepper. Mix well and let it sit for about 10 minutes to allow the flavors to meld.

Toast the Baguette
Arrange baguette slices on a baking sheet. Brush lightly with olive oil. Toast in the preheated oven for about 5-7 minutes or until golden brown.

Assemble the Bruschetta
Top each toasted baguette slice with a generous spoonful of the tomato mixture. Serve immediately.
