Prep

    Make honey syrup

    If you don't have honey syrup ready, combine equal parts honey and warm water (for example, 1/4 cup honey + 1/4 cup warm water). Stir until fully dissolved and cool before using.

    Chill a coupe or rocks glass in the freezer or fill with ice water to cool while you prepare the cocktail.

Mixing

    Add 2 oz Dewar's (or your chosen blended Scotch), 0.75 oz fresh lemon juice, 0.5 oz honey syrup, 0.25 oz orange liqueur, and 2 dashes Angostura bitters into a cocktail shaker.

    Fill the shaker with ice (about 1 cup or enough to come 3/4 of the way up). Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the exterior frosts.

    If you chilled your serving glass with ice water, dump it out now. Strain the cocktail through a fine strainer (or the shaker strainer) into the chilled coupe or into a rocks glass over a large ice cube if you prefer it on the rocks.

    Express the oils from an orange peel over the surface of the drink by holding the peel skin-side down over the glass and giving it a firm squeeze, then run the peel around the rim and drop it into the drink as a garnish.
