    Marinate shrimp

    In a medium bowl combine 2 tbs olive oil, 1 tbs lime juice, 1 tsp minced garlic, 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp chipotle or chile powder, 1 tsp kosher salt and 1/2 tsp black pepper. Add the 12 shrimp and toss to coat. Let marinate 10–15 minutes at room temperature (no longer than 30 minutes).

    Cook shrimp

    Heat a large skillet over medium-high heat. Add a drizzle (about 1 tsp) of oil. When shimmering, add shrimp in a single layer and cook 1.5–2 minutes per side until opaque and lightly charred — total 3–4 minutes. Remove from pan to rest for 1 minute. If using a grill, oil grates and cook similarly.

Slaw & Vegetables

    Prepare slaw

    In a bowl combine 0.75 cup shredded red cabbage, 0.75 cup shredded green cabbage, and 0.5 cup thinly sliced red bell pepper. Add 2 tsp mayonnaise, 1 tsp plain yogurt or sour cream, 1 tsp apple cider vinegar, 1/2 tsp honey, 1/4 tsp salt, and a pinch (1/8 tsp) black pepper. Toss until evenly coated. Taste and adjust acidity or salt. Stir in 2 tbs chopped cilantro and set aside.

    Prep lime and cilantro

    Zest the lime if desired and cut into wedges or segments for serving. Reserve a few whole cilantro leaves for garnish.

Tortillas & Assembly

    Warm tortillas

    Heat a dry skillet or griddle over medium heat. Brush each 'Tozi' tortilla lightly with 1 tsp oil or butter and warm 20–30 seconds per side until pliable and slightly toasted. Keep warm wrapped in a clean towel.

    Assemble tacos

    Place one warmed tortilla on a plate. Spoon half of the slaw onto the center. Arrange 6 cooked shrimp (for two tacos total, 3 shrimp per taco or divide as preferred) on top of the slaw. Drizzle 1 tsp salsa macha over each taco (adjust to heat preference). Sprinkle with reserved cilantro leaves and a little lime zest if using. Repeat with second tortilla and remaining ingredients.

    Serve immediately with lime wedges on the side for squeezing. Offer extra salsa macha and cilantro at the table.
