Method

Preparing the Gnocchi

    Cook the Potatoes

    Boil the potatoes in salted water until fork-tender, approximately 20 minutes. Drain and let cool slightly.

    Make the Dough

    Peel the potatoes and mash them in a bowl. Add the flour, egg, and salt. Mix until a dough forms, then knead gently until smooth.

    Shape the Gnocchi

    Divide the dough into sections and roll each into a rope about 1/2 inch thick. Cut into 1-inch pieces and shape each piece with a fork.

Making the Ragu Bolognese

    Sauté the Vegetables

    In a large pan, heat olive oil over medium heat. Add diced onion, carrot, and celery. Sauté until softened, about 5-7 minutes.

    Cook the Meat

    Add ground beef and cook until browned. Stir in minced garlic and cook for an additional minute.

    Simmer the Sauce

    Pour in the red wine and let it reduce slightly. Add crushed tomatoes, salt, pepper, oregano, and basil. Simmer for 30 minutes.

Sautéing the Mushrooms

    Cook the Mushrooms

    In a skillet, melt butter over medium heat. Add sliced mushrooms and garlic. Cook until mushrooms are browned, about 5-7 minutes. Season with salt, pepper, and parsley.

Bringing it All Together

    Cook the Gnocchi

    Bring a pot of salted water to a boil. Add gnocchi and cook until they float to the surface, approximately 2-3 minutes. Drain.

    Serve

    Plate the gnocchi, top with Ragu Bolognese, sautéed mushrooms, and a generous sprinkle of grated Parmigiano Reggiano.
