Crostata Dough Preparation

Make the Dough
In a large bowl, mix flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in ice water until the dough comes together. Wrap in plastic and chill for at least 1 hour.

Roll Out Dough
On a floured surface, roll out the dough to fit a 9-inch tart pan. Press into the pan and trim excess dough. Chill while preparing the filling.
Frangipane & Pear Filling Preparation

Prepare Pears
In a bowl, toss sliced pears with brown sugar, cinnamon, and lemon juice. Set aside.

Make Frangipane
In a mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in almond flour and vanilla extract until combined.
Assembly & Baking

Assemble Crostata
Spread the frangipane filling evenly over the chilled dough. Arrange the pear mixture on top.

Bake
Preheat the oven to 375°F (190°C). Bake the crostata for 40-45 minutes or until the filling is set and the crust is golden brown. Allow to cool before serving.

Chill and Churn
Transfer the mixture to a bowl, cover, and chill in the refrigerator. Once chilled, churn in an ice cream maker according to the manufacturer's instructions. Freeze until firm.
