Bruschetta Preparation

    Prepare the Heirloom Tomato Conserva

    Dice the heirloom tomatoes and place them in a bowl. Drizzle with 2 tablespoons of olive oil, and season with salt and black pepper. Mix gently and set aside to marinate for at least 15 minutes.

    Prepare the Bread

    Preheat the oven to 400°F (200°C). Slice the baguette or rustic bread into 1/2-inch slices. Arrange the slices on a baking sheet and brush each side with the remaining 1 tablespoon of olive oil. Toast in the oven for about 5-7 minutes or until golden and crispy.

    Assemble the Bruschetta

    Remove the toasted bread from the oven and rub one side of each slice with a cut garlic clove. Top each slice with a spoonful of the heirloom tomato conserva, a few leaves of fresh arugula, a slice of prosciutto, and a sprinkle of Parmigiano Reggiano. Drizzle with balsamic vinegar before serving.
