    Prepare the Butternut Squash

    Preheat your oven to 400°F (200°C). Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for 25-30 minutes until tender. Once cooled, scoop the flesh into a bowl and mash it until smooth.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions until they float to the top. This usually takes about 3-5 minutes. Drain and set aside.

    Make the Brown Butter Sage Sauce

    In a skillet over medium heat, melt the butter. Add the sage leaves and cook until the butter turns a golden brown color and has a nutty aroma, about 5-7 minutes. Be careful not to burn the butter.

    Combine and Serve

    Add the cooked ravioli to the brown butter sage sauce, gently tossing to coat. Season with salt and pepper to taste. Serve immediately, topped with grated Parmesan cheese and toasted pepitas.
