Prepare the veal
Season the veal cutlets with salt and black pepper on both sides.

Assemble the cutlets
Lay a slice of prosciutto and two sage leaves on each veal cutlet. Secure with toothpicks or kitchen twine.

Dredge the cutlets
Coat each assembled cutlet in flour, shaking off any excess.

Cook the cutlets
In a large skillet, heat olive oil over medium heat. Add the cutlets and cook for about 3-4 minutes on each side, or until golden brown. Remove from the skillet and set aside.

Make the sauce
In the same skillet, melt the butter and pour in the white wine and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the pan.

Return the veal cutlets to the skillet and simmer in the sauce for another 2-3 minutes to heat through.
