    Clean the Mussels

    Place the mussels in a large bowl of cold water. Scrub the shells to remove any dirt and debris, and remove the beards (the fibrous strands that cling to the shells). Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot or Dutch oven, melt the butter over medium heat. Add the minced garlic and chopped shallots, sautéing for about 2-3 minutes until fragrant and translucent.

    Add Wine and Seasoning

    Pour in the white wine and add the lemon juice, black pepper, and salt. Bring the mixture to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot, covering it with a lid. Cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.
