    Prepare the Steak

    Take the New York strip steaks out of the refrigerator and let them rest at room temperature for about 30 minutes before cooking. This helps them cook more evenly.

    Preheat the Pan

    Heat a large cast-iron skillet or frying pan over medium-high heat until it is hot. You want the pan to be very hot to sear the steak.

    Season the Steak

    While the pan is heating, pat the steaks dry with paper towels. Rub each steak with olive oil and season generously with salt and black pepper on both sides.

    Add Garlic and Rosemary

    Crush the garlic cloves slightly with the side of a knife and add them to the hot pan along with the fresh rosemary sprigs. This will infuse the oil with flavor.
