Cooking Instructions
- 1
Prepare the Steak
Take the New York strip steaks out of the refrigerator and let them rest at room temperature for about 30 minutes before cooking. This helps them cook more evenly.
- 2
Preheat the Pan
Heat a large cast-iron skillet or frying pan over medium-high heat until it is hot. You want the pan to be very hot to sear the steak.
- 3
- 4
Add Garlic and Rosemary
Crush the garlic cloves slightly with the side of a knife and add them to the hot pan along with the fresh rosemary sprigs. This will infuse the oil with flavor.
- 5
Sear the Steak
Carefully place the steaks in the hot pan. Sear the steaks for about 4-5 minutes on one side without moving them to develop a nice crust.
- 6
Flip the Steak
Using tongs, flip the steaks over and sear the other side for another 4-5 minutes for medium-rare. Adjust the time if you prefer a different level of doneness.
- 7
- 8
Rest the Steak
Once cooked to your preference, remove the steaks from the pan and let them rest on a cutting board for 5-10 minutes. This allows the juices to redistribute.
