    Slice the eggplants into 1/4 inch thick rounds. Sprinkle salt over the slices and place them in a colander. Let them sit for about 30 minutes to draw out excess moisture.

    After 30 minutes, rinse the eggplant slices under cold water to remove the salt. Pat them dry with paper towels.

    In a large skillet, heat the olive oil over medium-high heat. Fry the eggplant slices in batches until they are golden brown on both sides, about 3-4 minutes per side. Remove and drain them on paper towels.
