    Prepare the Onions

    Slice the medium onion into thin rings. In a skillet over medium heat, melt 1 tablespoon of butter and add the onions. Cook until they are caramelized, about 10-15 minutes, stirring occasionally. Set aside.

    Form the Patties

    In a bowl, mix the ground beef with salt and pepper. Form the mixture into two equal patties, roughly 1/2 inch thick.

    Cook the Patties

    In the same skillet used for the onions, add the remaining tablespoon of butter over medium-high heat. Cook the patties for about 4-5 minutes per side, or until they reach your desired doneness. In the last minute of cooking, place a slice of Swiss cheese on top of each patty to melt.

    Assemble the Patty Melt

    Spread spicy mustard on one side of each slice of rye bread. Place a cooked patty with melted cheese on top of one slice, followed by a generous portion of caramelized onions. Top with another slice of rye bread, mustard side down.

    Grill the Sandwich

    In the skillet, add a little more butter if needed. Grill the sandwich over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and crispy.

    Serve

    Remove from heat, cut in half if desired, and serve hot with your favorite sides.
