    Prepare the Filling

    In a skillet over medium heat, cook the sausage until browned. Add the bacon and ham, cooking until crispy. Stir in the jalapeños, onion, and tomatoes, cooking until the onions are translucent. Set the filling aside.

    Make the Omelette

    In a bowl, whisk together the eggs, salt, and black pepper until well blended. In the same skillet, melt 1 tablespoon of butter over medium heat. Pour in half of the egg mixture and cook until the edges begin to set.

    Add the Filling

    Once the omelette is set but still slightly runny on top, add half of the filling and half of the cheddar cheese. Carefully fold the omelette in half and cook for another minute until the cheese is melted.

    Repeat for Second Omelette

    Remove the first omelette from the skillet and repeat the process with the remaining egg mixture, filling, and cheese to create a second omelette.

    Serve

    Cut the omelettes in half and serve warm, garnished with additional tomatoes or jalapeños if desired.
