Prepare the Bacon

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and let drain on a paper towel. Once cooled, crumble the bacon into small pieces.

Make the Warm Apple Onion Chutney

    Sauté the Vegetables

    Peel and chop the apple and onion. In the same skillet used for bacon, add the chopped onion and sauté for about 3 minutes until softened. Add the chopped apple, cinnamon, brown sugar, apple cider vinegar, salt, and pepper. Cook for an additional 5-7 minutes until the apples are tender and the mixture is slightly caramelized.

Prepare the Spiced Carrot Vinaigrette

    Blend the Vinaigrette

    Peel and chop the carrots. In a blender, combine the carrots, olive oil, Dijon mustard, honey, salt, and pepper. Blend until smooth and creamy. Adjust seasoning if necessary.

Assemble the Salad

    In a large serving bowl, layer the mixed greens, followed by the warm apple onion chutney, and crumbled bacon. Drizzle the spiced carrot vinaigrette over the top.
