In a small bowl, mix the smoked paprika, brown sugar, garlic powder, onion powder, salt, and black pepper. Rub this mixture all over the pork shoulder.

In a large skillet, heat the olive oil over medium-high heat. Add the pork shoulder and sear it on all sides until browned, about 5-7 minutes.

Slow Cook the Pork
Transfer the seared pork to a slow cooker. Add the apple cider vinegar and water. Cover and cook on low for 8 hours or until the pork is tender and shreds easily.

Prepare the Sweet Potatoes
Preheat your oven to 400°F (200°C). Peel the sweet potatoes and use a spiralizer or a vegetable peeler to create curls.

Season the Sweet Potato Curls
In a large bowl, combine the sweet potato curls, olive oil, brown sugar, salt, cayenne pepper, and paprika. Toss to coat evenly.

Spread the sweet potato curls in a single layer on a baking sheet. Bake for 20-25 minutes, or until crispy, flipping halfway through.
