Method

Preparing the Falafel

    Roast the Butternut Squash

    Preheat the oven to 400°F (200°C). Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for about 30-35 minutes until soft. Let it cool slightly, then scoop the flesh into a bowl.

    Combine Ingredients

    In a food processor, add the roasted butternut squash, chickpeas, garlic, parsley, cumin, coriander, salt, and black pepper. Pulse until combined but still slightly chunky.

    Form the Falafel

    Transfer the mixture to a bowl and add flour. Mix until combined. Use your hands to form small balls or patties.

    Cook the Falafel

    Heat olive oil in a skillet over medium heat. Fry the falafel in batches for about 4-5 minutes on each side until golden brown. Drain on paper towels.

Pickling the Red Onion

    Prepare the Pickling Mixture

    In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a boil, stirring until the sugar dissolves.

    Pickle the Onion

    Place the sliced red onion in a jar and pour the hot pickling mixture over it. Let it cool to room temperature, then refrigerate for at least 30 minutes.

Preparing the Cabbage

    Mix the Cabbage

    In a bowl, combine shredded cabbage, lemon juice, and salt. Toss well and let sit for about 10 minutes to soften.

Making the Vegan Feta Sauce

    Blend the Sauce

    In a blender or food processor, combine tofu, lemon juice, nutritional yeast, olive oil, garlic powder, and salt. Blend until creamy and smooth.

Preparing the Garlic Flatbread

    Make the Dough

    In a large bowl, combine flour, yeast, and salt. Slowly add warm water and olive oil, mixing until a dough forms.

    Knead and Rest

    Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour.

    Cook the Flatbread

    Divide the dough into smaller balls. Roll each ball out into a flat circle. In a skillet, cook each flatbread on medium heat for 2-3 minutes on each side, or until golden brown. Brush with minced garlic.
