Preparing the Falafel

Roast the Butternut Squash
Preheat the oven to 400°F (200°C). Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet. Roast for about 30-35 minutes until soft. Let it cool slightly, then scoop the flesh into a bowl.

Transfer the mixture to a bowl and add flour. Mix until combined. Use your hands to form small balls or patties.

In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a boil, stirring until the sugar dissolves.
