Meatloaf Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Ingredients

    In a large mixing bowl, combine ground beef, ground pork, chopped onion, minced garlic, bread crumbs, egg, milk, Worcestershire sauce, salt, and black pepper. Mix until well combined.

    Shape and Bake

    Transfer the meat mixture into a loaf pan, shaping it into a loaf. Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C).

    Cool and Slice

    Once cooked, remove the meatloaf from the oven, let it cool for 10 minutes, then slice it into thick pieces.

Braised Collard Greens

    Sauté Onions and Garlic

    In a large skillet, heat olive oil over medium heat. Add sliced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute.

    Add Collard Greens and Broth

    Add chopped collard greens to the skillet and pour in vegetable broth. Stir to combine and season with salt and black pepper.

    Cover and simmer for about 30 minutes, stirring occasionally, until the collard greens are tender.

    Finish with Vinegar

    Stir in apple cider vinegar before serving.

Brown Gravy Preparation

    In a saucepan, melt butter over medium heat.

    Add flour to the melted butter, whisking continuously for about 2 minutes until it turns golden.

    Gradually add beef broth while whisking to prevent lumps. Continue to cook until the gravy thickens, about 5-7 minutes.

    Season with salt and black pepper to taste.

Sandwich Assembly

    Toast Rolls

    Slice the onion rolls in half and toast them lightly until golden.

    Assemble Sandwich

    On the bottom half of each toasted onion roll, place a slice of meatloaf, top with braised collard greens, and drizzle with brown gravy. Place the top half of the roll on.
