Caramelize the Onions

    Prepare the Onions

    Peel and thinly slice the medium onions.

    Cook the Onions

    In a large skillet, heat the butter and olive oil over medium heat. Once melted, add the sliced onions, sugar, and salt. Stir to coat the onions.

    Caramelize

    Cook the onions for about 20-25 minutes, stirring occasionally until they are golden brown and caramelized. Remove from heat and set aside.

Assemble the Sandwich

    Prepare the Cheese

    Grate the Gruyère, Fontina, and Mozzarella cheeses and mix them in a bowl.

    Spread Butter

    Butter one side of each slice of sourdough bread.

    Add Cheese and Onions

    On the unbuttered side of two slices, sprinkle half of the cheese mixture, add a generous portion of caramelized onions, and then top with the remaining cheese mixture. Cover with the other slices of bread, buttered side facing out.

Grill the Sandwich

    Heat the Skillet

    In the same skillet, heat over medium heat.

    Cook the Sandwich

    Place the assembled sandwich in the skillet. Grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.

    Once done, remove from the skillet, slice in half, and serve hot. Sprinkle with garlic powder and black pepper if desired.
