Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 425°F (220°C) to prepare for baking the lava cakes.
- 2
Making the Chocolate Mixture
- 3
Melt Chocolate and Butter
In a medium microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate. Microwave in 30-second intervals, stirring in between, until completely melted and smooth.
- 4
Combine Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until light and frothy.
- 5
Mix Chocolate with Egg Mixture
Gradually add the melted chocolate mixture to the egg mixture, stirring continuously until well combined.
- 6
Add Flour and Vanilla
Stir in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Do not overmix.
Baking the Lava Cakes
- 7
Pour Batter into Ramekins
Divide the cake batter evenly among the prepared ramekins, filling each about 2/3 full.
- 8
Bake
Place the ramekins in the preheated oven and bake for 12-14 minutes, until the edges are firm but the center is still soft.
- 9
Cool Slightly
Remove the ramekins from the oven and let them cool for about 1 minute.
