Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes or until they are deeply caramelized and golden brown.

    Add Garlic and Deglaze

    Stir in the minced garlic and cook for an additional 2 minutes. Pour in the white wine and scrape the bottom of the pot to deglaze, cooking until the wine reduces by half.

    Add Broth and Seasonings

    Add the beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and let it cook for another 20 minutes.

    Serve the Soup

    Remove the bay leaf and ladle the soup into bowls. Top with toasted baguette slices and a generous amount of cheese.

    Melt the Cheese

    Place the bowls under the broiler for a few minutes until the cheese is bubbly and golden brown.
