Method

Preparing the Salad

  1. 1

    Wash the Greens

Rinse the mixed greens under cold water and spin dry using a salad spinner or pat dry with a clean kitchen towel.

  2. 2

    Cut the Watermelon

Remove the rind from the watermelon and cut it into bite-sized cubes (about 1 inch). Measure out 3 cups of the watermelon cubes.

  3. 3

    Halve the Grape Tomatoes

Slice the grape tomatoes in half lengthwise and set them aside.

  4. 4

    Chop the Mint

Rinse the fresh mint leaves under cold water, pat them dry, and chop them coarsely.

Assembling the Salad

  1. 5

    Combine Ingredients

In a large bowl, add the prepared mixed greens, watermelon cubes, halved grape tomatoes, crumbled feta cheese, and chopped mint.

  2. 6

    Prepare the Dressing

In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper until well combined.

  3. 7

    Dress the Salad

Drizzle the dressing over the salad mixture and gently toss to combine all ingredients evenly.

  4. 8

    Serve

Transfer the watermelon salad to a serving platter or individual bowls. Enjoy immediately as a refreshing side dish or light meal.
