    Prepare the Vegetables

    Slice the onion and bell peppers into thin strips.

    Heat the Oil

    In a large skillet, heat the olive oil over medium heat.

    Cook the Vegetables

    Add the sliced onion and bell peppers to the skillet. Sprinkle with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are softened and slightly caramelized. Remove from heat and set aside.

Assembling the Quesadilla

    Layer the Quesadilla

    Place one tortilla in the skillet. Sprinkle half of the shredded cheese evenly over the tortilla.

    Add Vegetables

    Evenly distribute half of the sautéed onion and pepper mixture over the cheese.

    Top with Cheese

    Sprinkle the remaining shredded cheese on top of the vegetables. Place a second tortilla over the top.

Cooking the Quesadilla

    Cook the Quesadilla

    Cook in the skillet for about 3-4 minutes until the bottom tortilla is golden brown and the cheese is beginning to melt.

    Flip the Quesadilla

    Carefully flip the quesadilla using a spatula. Cook for another 3-4 minutes on the other side until golden brown and the cheese is fully melted.

    Slice and Serve

    Remove the quesadilla from the skillet. Allow it to cool for a minute, then cut it into wedges. Serve warm with optional toppings such as sour cream, salsa, or guacamole.
