Cook the French Fries
Preheat your oven according to the instructions on the package of frozen French fries. Spread the fries on a baking sheet in a single layer and bake for 25-30 minutes or until golden brown and crispy, turning halfway through.

Chop the Green Onions
Wash and thinly slice the green onions, separating the green parts from the white parts.

Prepare the Cheese Fondue
In a small saucepan, heat the cheese fondue over low heat, stirring occasionally until melted and smooth. If using store-bought fondue, follow the package instructions.
Assembly

Assemble the Highball Fries
Once the fries are done baking, remove them from the oven and place them on a large serving platter. Drizzle the melted cheese fondue over the fries evenly.

Top with Bacon and Queso Fresco
Sprinkle the crumbled Applewood bacon over the cheesy fries, followed by the Queso Fresco. Add the chopped green onions on top for garnish.

Serve the Highball Fries hot as an appetizer or side dish, and enjoy with your favorite dipping sauces if desired.
