Main Ingredient

Seasonal Vegetables

Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat while the salmon is marinating.

Cooking the Salmon

  1. 3

    Grill the Salmon

Once the grill is hot, remove the salmon from the marinade and place it on the grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

Wash and trim the asparagus, slice the bell peppers, and cut the zucchini into rounds. In a bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

  2. 5

    Grill the Vegetables

In the last 10 minutes of grilling the salmon, add the seasoned vegetables to the grill. Cook until they are tender and slightly charred, about 5-7 minutes, turning occasionally.

Serving

  1. 6

    Plate the Dish

Remove the salmon and vegetables from the grill. Serve immediately on a plate, with the grilled salmon on one side and the seasonal vegetables on the other.

  2. 7

    Garnish (optional)

If desired, garnish with fresh herbs or lemon wedges before serving.
