Prepare Vegetables

Slice the Vegetables
Thinly slice the onion and bell peppers. Set aside.

Sauté the Vegetables
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and bell peppers, and sauté for about 5-7 minutes until they are softened and slightly caramelized. Season with salt and pepper to taste.
Assemble Quesadillas

Layer Ingredients
On one half of each flour tortilla, sprinkle a generous amount of Cheddar Jack cheese. Top with sautéed onions and peppers, then add more cheese on top to help bind the quesadilla.

Fold Tortillas
Fold the tortillas in half over the filling.
Grill Quesadillas

Heat the Skillet
Wipe the skillet clean and add the remaining tablespoon of olive oil. Heat it over medium-high heat.

Cook Quesadillas
Place the folded quesadillas in the skillet. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
Serve

Slice and Serve
Remove the quesadillas from the skillet and let them cool for a minute. Cut into wedges and serve with fire roasted salsa and sour cream on the side.
