    Prepare the Tomatoes

    Wash the green tomatoes thoroughly. Slice them into 1/2 inch thick rounds and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture.

    Set Up Breading Station

    Prepare three shallow bowls. In the first bowl, place the flour mixed with black pepper. In the second bowl, whisk together the eggs and buttermilk. In the third bowl, combine the cornmeal and remaining salt.

    Bread the Tomatoes

    Dip each tomato slice first in the flour, then in the egg mixture, and finally coat them in the cornmeal. Ensure each slice is well-coated.

    Fry the Tomatoes

    Heat vegetable oil in a large skillet over medium heat. Once hot, carefully add the breaded tomato slices in batches, frying for about 3-4 minutes on each side or until golden brown. Transfer to a paper towel-lined plate to drain excess oil.

    Sprinkle the fried green tomatoes with crumbled Cotija cheese while they are still hot.

Remoulade Sauce

    Mix the Ingredients

    In a bowl, combine mayonnaise, Dijon mustard, capers, Worcestershire sauce, hot sauce, chopped parsley, and lemon juice. Mix until smooth.

    Cover the remoulade sauce and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Citrus Aioli

    Combine Ingredients

    In a bowl, mix together mayonnaise, minced garlic, lemon zest, orange zest, and lemon juice. Season with salt and black pepper to taste.

    Cover the citrus aioli and refrigerate for at least 30 minutes for the best flavor.
