    Prepare the Potatoes

    Wash and peel the potatoes, then slice them thinly using a mandoline or sharp knife to create even chips.

    Fry the Chips

    Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the sliced potatoes in batches, frying until they are golden brown and crispy, about 3-5 minutes.

    Drain and Season

    Remove the chips with a slotted spoon and place them on paper towels to drain excess oil. While still hot, sprinkle with salt to taste.

Rosemary Blue Cheese Cream

    Mix Cream Ingredients

    In a mixing bowl, combine the cream cheese and sour cream. Use an electric mixer or whisk to blend until smooth and creamy.

    Add Flavorings

    Fold in the crumbled blue cheese, chopped rosemary, garlic powder, and black pepper. Mix gently until all ingredients are well combined.

    Chill the Dip

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

    Prepare Hot Honey

    In a small saucepan over low heat, combine the honey and red pepper flakes. Stir gently until the mixture is warm and well combined, about 5 minutes. Do not boil.
