Pork Preparation

    Prepare the Pork

    In a slow cooker, place the pork shoulder. Peel and quarter the onion and add it to the slow cooker. Smash the garlic cloves and add them whole.

    Season the Pork

    In a small bowl, mix together the smoked paprika, brown sugar, salt, black pepper, and cayenne pepper. Rub this mixture all over the pork shoulder.

    Add Liquids

    Pour the apple cider vinegar and water into the slow cooker with the pork. Cover and cook on low for 8-10 hours, or until the pork is tender and easily shreds.

BBQ Sauce

    Prepare the BBQ Sauce

    In a saucepan, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, mustard, smoked paprika, salt, and black pepper. Bring to a simmer over medium heat.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally, until it thickens. Remove from heat and set aside.

Sandwich Assembly

    Shred the Pork

    Once the pork is cooked, remove it from the slow cooker and shred it using two forks. Discard any large pieces of fat.

    Combine with BBQ Sauce

    Mix the shredded pork with the prepared BBQ sauce in a large bowl until well combined.

    Assemble the Sandwiches

    Toast the buns lightly. Place a generous amount of the BBQ pulled pork on the bottom half of each bun. Top with pickles and coleslaw, then place the top half of the bun on.
