Thinly slice the prosciutto, salami, and capicola.

Preparing the Cheeses

Cut the mozzarella into bite-sized pieces, and shave the parmesan. Crumble the gorgonzola into small chunks.

Preparing Vegetables & Condiments

Prepare Sun Dried Tomatoes and Olives

Drain excess oil from sun dried tomatoes if packed in oil. Rinse the green and black olives, and slice them in half if desired.

    Plate the Ingredients

On a large serving platter, arrange the sliced cured meats, cheeses, sun dried tomatoes, and olives in an appealing manner. Serve with the toasted crostini on the side.
