Brewing Instructions
1. Mashing
In a large brew kettle, heat 5 gallons of water to around 165°F (74°C). Add the crushed grains (pale malt, crystal malt, chocolate malt, and roasted barley) to the water and stir well. Maintain the temperature around 150°F (65°C) for 60 minutes.
2. Sparging
After mashing, sparge the grains with hot water to collect around 5 gallons of wort in another kettle.
3. Boiling
Bring the wort to a boil. Once boiling, add the bittering hops and boil for 60 minutes. In the last 5 minutes of the boil, add the aroma hops.
4. Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
5. Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel and allow it to ferment at around 68°F (20°C) for 1-2 weeks.
6. Bottling
Once fermentation is complete, add vanilla extract and transfer the beer to sanitized bottles. Cap and let it carbonate for another week.
7. Enjoy
