Prepare and cook potatoes

Peel (if desired) and cut potatoes into roughly 2–3 cm cubes so they cook evenly. Place potatoes in a large pot and cover with cold water by about 2 cm. Add 1/2 tsp salt. Bring to a boil over high heat, then reduce to a simmer and cook until potatoes are very tender when pierced, about 12–15 minutes. Drain and return to the pot off the heat to dry for 2 minutes.

Warm dairy

While potatoes cook, combine milk, cream and vegetable or chicken stock in a small saucepan and heat gently until steaming but not boiling. Keep warm over the lowest heat.

Mash and season base

Mash the drained potatoes with butter until smooth (use a potato masher or ricer for a silkier texture). Gradually add the warm milk/cream/stock mixture and crème fraîche, mixing until you reach a creamy, slightly loose consistency suitable for a hearty side or a spoonable bowl. Adjust salt (use remaining 3/4 tsp gradually) and set aside on very low heat, covered, to keep warm.

Sweat leeks and turnip

Heat 1 tablespoon olive oil in a large skillet over medium heat. Add sliced leeks and a pinch of salt; cook gently, stirring, until softened and slightly translucent, about 6–8 minutes. Add diced turnip and continue to cook until the turnip is tender and beginning to caramelize at the edges, another 6–8 minutes.

Add garlic and herbs

Stir in the minced garlic and cook for 30–45 seconds until fragrant. Remove the pan from the heat and fold in chopped parsley and chives (reserve some herbs for garnish). Transfer the leek/turnip mixture to the mashed potato pot and stir to combine, keeping the pan lightly oiled for the bacon step.

Cook bacon

In the same skillet over medium-high heat, add the diced bacon (no additional oil initially; bacon will render its fat). Cook, stirring occasionally, until the bacon is crisp and golden, about 6–9 minutes. Use a slotted spoon to transfer most bacon and fat to a small bowl, leaving 1–2 tablespoons of the fat in the pan.

Black pepper finish

Return the pan to medium-low, add the freshly cracked black pepper to the reserved fat and warm for 20–30 seconds to bloom the pepper. Pour the peppered fat over the mashed potato mixture and stir thoroughly so the pepper flavor disperses evenly. Fold in the crisp bacon pieces, reserving a tablespoon for garnish.

Finishing

Taste the mash and adjust seasoning: add remaining salt if needed and a small squeeze (1 tsp) of lemon juice if you want brightness. If the mixture feels too thick, stir in a splash more warm milk or stock to reach desired consistency.

To serve, spoon the creamy black-pepper bacon potato into a warmed serving bowl. Dollop with extra crème fraîche, scatter the reserved crispy bacon and remaining chopped herbs on top, and finish with an extra twist of freshly cracked black pepper.

If you prefer a lighter presentation, portion into individual bowls and garnish the same way. Serve hot alongside roasted meats or as a rich soup-accompanying side.
