    Wash the turnip greens thoroughly to remove grit. Strip the tougher stems from the leaves and discard or save for another use; roughly chop the leaves into 1–2 inch pieces. Thinly slice the onion, mince the garlic, and grate the ginger. Measure out spices and liquids.

Cooking the aromatics and toasting seeds

    Heat oil and bloom whole spices

    In a wide skillet or sauté pan over medium heat, add 2 tablespoons oil. When oil shimmers, add the mustard seeds and cumin seeds. Cook, stirring occasionally, until the mustard seeds begin to pop and the cumin becomes fragrant, about 30–45 seconds. Lower heat if seeds are browning too quickly.

    Add onion, garlic, and ginger

    Add the sliced onion and a pinch (about 1/4 tsp) of salt to the pan. Sauté until the onion is softened and translucent, 5–7 minutes, stirring frequently. Add the minced garlic and grated ginger and cook 30–60 seconds until fragrant, being careful not to let the garlic burn.

    Add ground spices

    Stir in the turmeric, ground coriander, smoked paprika, and crushed red pepper flakes. Cook the spice mixture with the aromatics for 30 seconds to 1 minute to toast the ground spices and deepen their flavor.

Cooking the greens

    Add the chopped turnip greens to the pan in batches if necessary. As the first batch wilts, add more until all greens are in the pan. Toss with the aromatics and spices so the leaves are evenly coated.

    Pour in 1/2 cup broth, sprinkle 1 1/2 tsp salt and 1/2 tsp black pepper over the greens, and stir to combine. Cover the pan and reduce heat to medium-low. Cook until greens are tender and most of the liquid has evaporated, 6–10 minutes, stirring once or twice. If you prefer crisper greens, cook toward the lower end of the time; for softer, cook longer.

    Remove the lid, increase heat to medium-high briefly to evaporate any remaining liquid if needed, and taste. Stir in 2 tablespoons lemon juice and 1 teaspoon apple cider vinegar (if using) to brighten the flavors. Adjust salt and pepper to taste.

    Transfer to a serving bowl and, if desired, sprinkle toasted sesame seeds or chopped toasted nuts for texture. Serve warm as a side dish alongside rice, roasted meats, or beans.
