Prepare strawberries
Rinse 2 cups strawberries under cold running water. Hull (remove green caps) and slice each strawberry into halves or quarters depending on size so pieces are roughly 1/2–3/4 inch.

Prepare blueberries
Rinse 1 cup blueberries, drain in a colander, and pick through to remove any stems or damaged berries.

Prepare grapes
Rinse 1 cup seedless green grapes, drain, and halve larger grapes. Leave small grapes whole.

Prepare pineapple
If using fresh pineapple, cut off top and bottom, stand upright and slice away the skin. Remove core and cut the flesh into bite-sized 3/4-inch cubes for about 1 cup. If using canned pineapple, drain and roughly chop to equal 1 cup.

Prepare kiwi
Peel 2 kiwis and slice into 1/4-inch rounds or half-moons.

Prepare orange
Peel 1 orange, remove any white pith, and segment or slice into bite-sized pieces (cut between membranes for clean segments) to yield about 1 cup of fruit.

Combine fruits
Gently place all prepared fruit into a large mixing bowl. Toss carefully with a large spoon to combine without crushing delicate berries.

Make honey-lime dressing
In a small bowl whisk together 2 tablespoons honey and 1 teaspoon fresh lime juice until smooth. If honey is thick, briefly warm it or thin with a few drops of warm water. Add 1/4 teaspoon coarse sea salt and whisk to dissolve.

Finish and serve
Tear or finely chiffonade 8 mint leaves and scatter over the fruit. Serve immediately at room temperature or chilled. Leftovers can be refrigerated in an airtight container for up to 2 days; stir gently before serving as juices may collect.
