    Make a dark roux

    In a heavy-bottomed Dutch oven or large pot set over medium heat, add the vegetable oil. When warm, whisk in the flour. Stir constantly with a wooden spoon or heatproof spatula, keeping the roux moving so it browns evenly. Continue stirring for about 25–35 minutes until the roux reaches a deep chocolate-brown color (like chocolate sauce) and smells nutty. Reduce heat if it browns too quickly or smokes. This is the flavor foundation—patience is key.

    Add the holy trinity

    Once the roux is that deep brown, immediately add the diced onion, bell pepper, and celery. The roux will sputter—stir vigorously to combine. Cook the vegetables in the roux, stirring frequently, until the onion is translucent and the vegetables are soft, about 6–8 minutes. Add the minced garlic and cook 30–60 seconds until fragrant; do not let garlic burn.

Proteins & Sausage

    Brown the sausage & sear the chicken

    Push the vegetables to one side (or remove them briefly to a plate) and add the sliced Conecuh sausage to the pot. Cook 3–4 minutes until the sausage releases some fat and begins to brown. If the pot is dry after browning, add a tablespoon of oil. Add the chicken thigh pieces and sear 3–4 minutes, stirring, until edges are lightly browned but not cooked through. Stir everything together so the sausage, chicken and vegetables are evenly distributed in the roux.

Liquid, Seasoning & Vegetables

    Deglaze and simmer

    Slowly pour in 1 cup of the chicken stock while stirring to deglaze the pot and loosen any stuck bits from the bottom. Once incorporated, gradually add the remaining stock while stirring to create a smooth broth. Add the diced tomatoes (if using), Worcestershire sauce, bay leaves, thyme, paprika, cayenne, salt and black pepper. Bring to a gentle simmer, reduce heat to low, cover partially, and simmer for 25–30 minutes to allow flavors to marry and chicken to finish cooking through.

    Finish proteins

    After simmering, remove the bay leaves. Taste and adjust seasoning. Add the peeled shrimp to the gumbo and simmer just until shrimp turn pink and opaque, about 3–4 minutes. If shrimp are large, allow an extra minute. If you prefer a thicker gumbo, simmer uncovered for an additional 5–10 minutes to reduce. Stir in the file powder (1 tsp) in the final 1–2 minutes (or sprinkle filé into individual bowls) to slightly thicken and add a final layer of flavor.

Finishing & Garnish

    Ladle the gumbo over cooked white rice in individual bowls. Garnish with sliced green onions and chopped parsley. Offer extra filé powder at the table to sprinkle to taste. Serve hot with crusty bread or cornbread if desired.
