Method
Brussels sprouts & main seasoning
- 1
Prep the sprouts
Preheat the oven to 425°F (220°C). Trim the stem ends of the Brussels sprouts and remove any loose or yellow outer leaves. Cut sprouts larger than 1 inch in half lengthwise so pieces are similar size; leave small ones whole.
- 2
Season
Place the trimmed sprouts in a large bowl. Add 2 tablespoons olive oil, 1 teaspoon kosher salt, 1 teaspoon freshly ground black pepper, and 1 teaspoon minced garlic (if using). Toss thoroughly so every sprout is evenly coated.
- 3
Roast
Spread the sprouts cut-side down in a single layer on a rimmed baking sheet. Roast in the preheated oven for 20–25 minutes, until the outer leaves are deeply browned and the centers are tender when pierced with a fork. For extra browning, flip once halfway through cooking (after about 10–12 minutes).

Finish and serve
When sprouts are done, remove the pan from the oven. Immediately sprinkle 1 tablespoon lemon juice over them and toss gently on the tray to coat. Transfer to a serving bowl and sprinkle 2 tablespoons grated Parmesan and 2 tablespoons toasted slivered almonds. If you like heat, add up to 1 teaspoon red pepper flakes to taste. Adjust salt and pepper and serve hot.
