Collect Turkey Drippings

After roasting the turkey, pour the drippings from the roasting pan into a measuring cup or bowl. Allow it to sit for a few minutes until the fat rises to the top.

Separate Fat

Skim off the excess fat from the top of the drippings, leaving about 1/4 cup of fat in the measuring cup.

Make Roux

In a large saucepan over medium heat, add the reserved fat from the turkey drippings. Once hot, whisk in the all-purpose flour until smooth, cooking for about 2-3 minutes until it turns a light golden color.

Add Broth

Slowly add the chicken or turkey broth to the roux, whisking continuously to prevent lumps. Bring the mixture to a simmer.

Season the Gravy

Stir in the turkey drippings, salt, black pepper, dried thyme, garlic powder, and onion powder. Continue to simmer for about 5-10 minutes, stirring occasionally until the gravy thickens to your desired consistency.

Garnish and Serve

Once thickened, remove from heat. Taste and adjust seasoning if necessary. Pour the gravy into a serving dish and garnish with freshly chopped parsley before serving.
